Whats up with eggs?
Eat them
Eggs are delicious....just eat them. A really great strength training coach at Purdue University told me to eat the whites...and to ditch the yolks. Here's something that is weird: I crack an egg into my Ramen Noodles when they're cooking. It's great!

When I was training eggs were one of the only sources of protien I could afford. I too cracked them into ramen and made egg drop soup. Eggs over rice a roni was a specialty of mine that the neighbors would actually come over and ask me to make for them.
Seriously, not the highest quality protien source out there, but for vaulters I don't see why you would need to stay away.

Yup. Eggs are as good a source of protein as you will find. Just avoid the yolks. Your body produces enough cholesterol on its own that you actually don't need any in your diet at all.
